Warm Lentil Salad

Hands-on time: 10 minutes

Cooking time: about 10 minutes

2 medium eggs

2 tsp olive oil

2 small leeks, trimmed and chopped

4 spring onions, chopped

1 red pepper, seeded and chopped

400g can lentils, drained

150ml (¼ pint) vegetable stock

a handful of rocket

salt and freshly ground black pepper

1 Bring a small pan of water to the boil. Gently lower the eggs into the pan, reduce the heat and simmer for 7 minutes.

2 Meanwhile, heat the oil in a separate pan and fry the leeks, spring onions and red pepper for 6–8 minutes until softened.

3 Stir in the lentils and stock and bring to the boil, then reduce the heat and simmer for 1–2 minutes.

4 Shell the eggs, then cut in half. Season the lentil mixture with salt and ground black pepper, then divide between two serving bowls and top each with an egg and a few rocket leaves.
